Ingredients per person
125g Jackal’s Hill Fromage Plain Ricotta
A few lettuce leaves
3 cherry tomatoes, cut in half
A few slices of cucumber
3 radishes, cut in 4
Micro-herbs or sprouts
A handful of fresh rocket
2 Tbsp of Extra Virgin Olive oil
1 Tbsp of Balsamic glaze
Salt & Pepper to taste
Method:
Start by preparing your salad ingredients and place on the side of the serving plate.
Put the Jackal’s Hill Fromage Plain Ricotta in a bowl, add salt & pepper to taste, mix well. With your hands make a nice flat patty.
Heat a non-stick frying pan and place the Ricotta patty in the dry pan. Warm up and dry fry until golden on both sides.
Place partly on the salad (don’t put it top of the salad as you don’t want to cook the fresh vegetables), drizzle with the olive oil and the balsamic glaze. Garnish with the rocket.
Et voilà, as easy as that!
Tips:
Making a balsamic glaze is time consuming, so I use shop bought one (Woolies has nice ones!).
