Ingredients for 2 persons
- 2 slices of white bread (or croissants) a couple of days old
- 1 egg
- 4 Tbsp full cream milk
- Butter to fry
- 125g Jackal’s Hill Fromage Mascarpone
- 250g frozen mixed berries
- 100g brown sugar
- White sugar & cinnamon mix
Method
Start by making the berry compote. Place the frozen berries and brown sugar in a saucepan, on medium heat. Once the berries are defrosted, reduce the heat and leave to cook gently, stirring once in a while. Remove from the stove once the compote starts to thicken. Set aside to cool down.
In a container big enough to dip the bread, beat the egg and milk together. Soak the slices of bread (or croissants sliced in ½), making sure you turn them around to absorb the mix on both sides.
In a large frying pan, melt the butter. When it start to foam, add the soaked bread slices, making sure you don’t break them. Leave to cook on medium heat until golden and crispy on both sides, turning several times.
Cut the slices of bread in ½ to make triangles and coat with the sugar & cinnamon mix on both sides. Place in the serving plates, add a generous dollop of Jackal’s Hill Fromage Mascarpone and finish with the Berry compote.
Tips
If you don’t have time (or the ingredients) to make a Berry compote, you can use homemade jam. Our Cherry Jam and Very Berry Jam are the perfect alternatives.
